Mom Bashed for Using Gluten-Free Flour to Make Banana Cake

A mom shared her recipe of four-ingredient banana bread to an American Facebook group and caused a lot of stir. She reveals that she used gluten-free self-raising flour because she was left with no choice. Panic buyers left the regular flour shelves empty due to the coronavirus. 

She says that she attempted to bake the four-ingredient banana bread in the slow cooker that night. She was a bit worried because she had to use gluten-free self-raising flour instead of the ordinary flour. 

She calls the panic buyers crazy because there was not one bag of ordinary flour left on the shelves. However, she was glad that the banana bread turned out pretty good. 

However, her post triggered other bakers to comment on her buying gluten-free flour despite not having the need for a gluten-free diet, unlike people suffering from Celiac Disease and Crohns' Disease.

One mother says the post made her mad because her daughter is a coeliac, and she is having a difficult time giving her food because people who do not need to be gluten-free are taking it. 

Another one says that even though his comment is irrelevant, he asks that the poster to be considerate of others who have a severe illness. 

A third one comments on behalf of the coeliacs, telling the mother to be mindful during these difficult times and to leave gluten-free products for those who need them due to specific health reasons. 

Many friends also express being unable to buy a lot of products, but in reality, they could not choose something else to eat. 

One coeliac also agrees to have a hard time finding gluten-free food. This person also says there is no "other" choice for others like him.

What is Celiac Disease? 

Celiac disease (or coeliac disease) is a severe autoimmune disease that causes damage to the small intestine when a person ingests gluten. Roughly, it affects 1 in 100 people worldwide. In America, two and a half million are undiagnosed and could be at risk for long term health complications. 

Gluten is a family of protein that can be found in grains such as barley, wheat, and rye. Wheat is the most commonly consumed among the four grains. When people with celiac disease eat gluten, their body automatically produces a defense mechanism that attacks the small intestine. When this happens, the nutrients will not be adequately absorbed into the body. 

Celiac disease is hereditary and can develop at any age after having ingested gluten. If left untreated, it can cause serious health problems.

Mom Defends Herself

The mother answers back to defend herself, saying she just wanted to feed her family. She says to those attacking her that she just bought a packet of gluten-free flour. She also says she is not one of those panic buyers who keep piles of stocks at home. 

Admittedly, she says that she cried her eyes out the other day because she had nowhere to buy diapers, formula milk, and wet tissue for her 14-month-old son. She adds that she also has a family to feed, and that she has a daughter who eats too little. Therefore, she has to find alternatives because, just like everybody, she is trying to feed and make her kids happy.
